Scallops and Chorizo Sauce


Scallops and Chorizo Sauce, I made this dish which can be served with pasta of your choice or potatoes or rice. The Scallops and Chorizo Sauce uses fresh healthy ingredients and tastes really good.
Ingredients per person
4 large scallops per person
1 clove of garlic chopped
1/2 red onion chopped fine
1 inch of chorizo sliced fine
4 mushrooms sliced per person
5 sticks of fresh asparagus cut into bite sized pieces
5 green beans cut into bite sized pieces
olive oil to fry
juice of half a lemon per person
zest of half a lemon
salt and pepper
Dried or Fresh pasta of your choice
Method
If using dry pasta place in a pan.
Cover with boiling water and a pinch of salt.
Place asparagus and green beans in a steamer or metal sieve over the boiling pasta and steam.
Sauce
Heat some olive oil in a frying pan to a medium heat.
Add garlic and onion and fry for about 3 mins until soft add the mushrooms and chorizo and cook on medium for 5 mins. Add some salt and pepper.
REMOVE from the frying pan.
Now make sure your pasta and veg are ready.
Heat some olive oil in the frying pan.
Add the scallops( if cooking a lot do in batches and remove).
Cook on high for about 1 min on each side. Do not over cook they will go hard. I was doing this for 2 so my pan was OK.
Add the mushroom, onion, chorizo and garlic sauce.
Add the lemon juice.
Add the asparagus and green beans and stir together.
Put pasta in pasta dishes top with the scallop and chorizo sauce.
Garnish with the zest of lemon
Variations
Add some white wine to the sauce.
Add some fresh single or double cream to the sauce
Add fresh herbs such as basil, lemon verbena, lemon thyme.
Use bacon instead of chorizo.

Green Soy bean Pasta




This pasta dish is a vegetarian dish using green soy beans. One of the best things is it is high in protein but cheap on the pocket. Also it is quick to make.
Everything you need to know about Soy products SOY
Ingredients
penne pasta( fresh or dried)
green soy beans, I use the frozen ones.
garlic cloves peeled and fine diced
onion fine diced
fresh tomatoes chopped chunky
1 inch of fresh ginger peeled and fine diced
1/4 chili for 2 more for more people or leave out if you do not like the heat
broccoli cut into small pieces
grated hard Italian cheese
salt and pepper
dried oregano
olive oil
Method
1. heat the olive oil in a frying pan to medium heat
2. fry the onion and garlic for 1 minute
3. add the chili and fresh ginger fry for another 2 minutes
4. Add the chopped tomatoes, oregano, broccoli and soy beans, stir and cook on a medium heat for 5 to 10 minutes
5. Add salt and pepper to taste.
6. Follow the instructions for Penne
7. Serve the penne with the sauce and grated cheese
Variations
Use tinned tomatoes ready chopped.
Use frozen broccoli, not as good but convenient.
Use tinned beans such as chick peas, borloti, black eye, haricot, red kidney
Use other beans which you can buy frozen ready cooked
Use up any vegetables you have in the fridge, just chop small and go for it.
If you like a sauce;
Add fresh milk and 2 tablespoons of tomato puree at the end of cooking.

Spicy Sausage Pasta

These are UK sausages but sausages are made world wide. Some of the best I have had are Chorizo in Spain , the vast variety available in Germany and Poland.

This is my recipe for Spicy Sausage Pasta which I have made recently. It was made for 2 .
Ingredients
3 sausages cut into small slices
5 fresh tomatoes chopped
3 cloves of garlic chopped fine
olive oil for frying
1 red onion diced small
1 zucchini/courgette sliced
1/4 of a fresh chilli chopped
2 tablespoons of tomato puree
4 tablespoons of milk( keep extra on one side to add for a runnier sauce)
salt and pepper
fresh penne pasta for 2,plunge into boiling water for 5 mins or what the manufactures recommend
Method
Take a large frying pan add olive oil and heat to a medium heat.
Add the garlic and chopped onion and fry until soft.
Add the chilli and the sliced sausage and cook until brown and the sausages are cooked through.
Add the chopped tomatoes and zucchini/courgette and cook for 5 mins.
Add the tomato puree and milk.
Add more milk and mix until you have the texture you want. I like it sticky so it sticks to the pasta.
Add salt and pepper to taste.
Cook the penne pasta.
Mix together and serve with grated cheese, a salad garnish of greens such as watercress, lettuce,spinach or bitter greens.

Pasta with Tomato

This is a simple dish of cooked pasta served cold with watercress, chopped peppers and tomatoes. I would top this of with and olive oil and wine vinegar dressing. It would be good as a starter dish or to go with fresh fish such as tuna or tilapea.

Folic Acid in a Healthy Diet

In my Times newspaper 24 November 2006 there was an article that said that folic acid can help in the reduction of heart disease and strokes. Previous research has found that it can help some cancers and Alzheimer's disease. The sources of this folic acid ( vitamin B) are in the following foods, green leafy vegetables such as Brussels sprouts, broccoli, spinach and green beans, oranges, dried beans, peas and lentils. I am hoping to include more pasta recipes which include these delicious foods and help us to have a healthy life style and healthy diet.

Tomato and Chickpea Pasta Recipe



Tomato and Chickpea Pasta

Pasta is made from flour, water and sometimes eggs. It is associated with Italy. There are lots of different types such as fettuccine, fusilli, lasagne, macaroni, tagliatelli, tortelini,vermicelli, zite, spaghetti, ravioli and canelloni.
I love to cook with pasta and I want to share with you some of my favourite pasta recipes.This recipe is for a sauce to go with a pasta of your choice and is for a main meal.This would serve 2 so double up for more portions. I use a large flat pan for making the sauce.

Ingredients
1 tin of chopped tomatoes--410gm--14oz--2 cups or use fresh skinned tomatoes
2 large onions diced
2 garlic cloves chopped
4 oz--1/2 cup--100gm of bacon, plain or I prefer smoked, cut into small pieces
1 cup--4 oz--100gm sliced mushrooms
1 tin of chickpeas-2 cups--14 oz--410gm
olive oil
dried oregano
salt and pepper to taste
Pasta such as macaroni 2 cups--8oz--200gm, this does for 2 but alter to suit your appetites.

Method
Heat the olive oil and fry the onions (do not brown), add the bacon and garlic,cook for a few minutes. Add the mushrooms , stir and cook for about 4 minutes. Add the tin of tomatoes, the tin of chickpeas and oregano, add the salt and pepper, taste and stir. I now cover and simmer for about 10 minutes.I like the pasta sauce to be dry but you may like it more runny, add water according to your preference.

Pasta from dry
Put boiling water into a large pan, add the dry pasta cook on simmer until the pasta is firm but not soft, about 5 to 8 minutes. Drain and serve
Pasta from fresh
Put boiling water into a large pan. Add the fresh pasta and cook quickly for about 2 minutes. Drain and serve. Put the pasta into individual dishes and cover with the sauce.

Variation
Add grated Parmesan cheese or a local cheese of your choice on top of the pasta
Add a chopped chilli if you like it spicey

8oz--1 cup--200gm sweetcorn, I use the tinned variety and without added sugar
2 cup--8 oz--200gm sliced mushrooms
olive oil
dried oregano and basil, about 1/2 teaspoon of each
salt and pepper to taste
Pasta such as macaroni 2 cups--8oz--200gm, this does for 2 but alter to suit your appetites.

Method
Heat the olive oil and fry the onions (do not brown), add garlic, cook for a few minutes. Add the mushrooms , stir and cook for about 4 minutes. Add the tin of tomatoes, the sweetcorn, oregano and basil, add the salt and pepper, taste and stir. I now cover and simmer for about 10 minutes.I like the sauce to be dry but you may like it more runny, add water according to your preference.
